Description

These Chilli, Bacon & Butterflied Prawn Skewers are smoky, spicy, and packed with bold flavor. Juicy prawns wrapped in crispy bacon and brushed with a chili glaze make an irresistible appetizer or barbecue favorite, perfect for sharing at any summer gathering or party.

Ingredients

Skewers

  • 16 large prawns, peeled, deveined, and butterflied
  • 8 slices streaky bacon, halved
  • 8 skewers

Glaze

  • 2 tablespoons olive oil
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili flakes
  • 1 garlic clove, minced
  • Salt and black pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat the grill: Preheat your grill to medium-high heat to ensure it’s hot enough to crisp the bacon and cook the prawns evenly.
  2. Prepare the prawns: Wrap each butterflied prawn with half a slice of streaky bacon, then thread them onto the skewers carefully to hold everything together during grilling.
  3. Make the glaze: In a small bowl, combine olive oil, sweet chili sauce, smoked paprika, chili flakes, minced garlic, and season with salt and black pepper. Stir well to blend all the flavors.
  4. Brush the skewers: Generously brush the prepared glaze all over the prawn and bacon skewers to infuse them with smoky-spicy flavor and help caramelize during cooking.
  5. Grill the skewers: Place the skewers on the preheated grill and cook for 3 to 4 minutes on each side, or until the bacon is crispy and the prawns are thoroughly cooked and opaque.
  6. Serve: Remove from the grill and serve immediately with fresh lemon wedges for squeezing over the top, enhancing the vibrant flavors.

Notes

  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
  • Adjust the amount of chili flakes according to your preferred spice level.
  • These skewers are delicious served alongside garlic aioli or a fresh green salad for a complete appetizer or light meal.
