Ingredients

Zucchini

  • 3 large zucchini, sliced lengthwise into thin strips

Cheeses and Dairy

  • 1 1/2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg

Vegetables and Herbs

  • 1 cup fresh spinach, chopped
  • 2 garlic cloves, minced

Instructions

  3. Salt and Rest: Lightly salt the zucchini slices and let them sit for 10 minutes. This helps draw out excess moisture.
  4. Pat Dry: After resting, pat the zucchini slices dry using paper towels to remove the released water and avoid sogginess.
  5. Roast Zucchini: Place the zucchini slices on a baking sheet and roast them in the oven for 8 to 10 minutes until softened but not browned.
  6. Prepare Filling: In a mixing bowl, combine ricotta cheese, half of the mozzarella, grated Parmesan, chopped spinach, egg, minced garlic, Italian seasoning, salt, and black pepper, stirring gently until well incorporated.
  7. Assemble Roll-Ups: Spread about 1 to 2 tablespoons of the cheese and spinach filling evenly over each roasted zucchini strip, then carefully roll each slice tightly to enclose the filling.
  8. Prepare Baking Dish: Spread 1 cup of marinara sauce evenly in the bottom of a baking dish to prevent sticking and add flavor.
