Description

A fun and hearty Walking Taco Casserole inspired by the classic walking taco experience. This layered dish combines seasoned ground beef, crunchy corn chips, melted cheddar cheese, and fresh taco toppings like lettuce and tomatoes, making it an easy, flavorful, and crowd-pleasing meal perfect for weeknight dinners or casual gatherings.

Ingredients

Meat and Seasoning

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning (about 1 oz)
  • 1 cup salsa

Base and Toppings

  • 2 cups crushed corn chips (such as Fritos)
  • 1½ cups shredded cheddar cheese
  • ½ cup sour cream
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a baking dish to prevent sticking and easy cleanup.
  2. Cook Ground Beef and Onions: In a skillet over medium heat, cook the ground beef and diced onion together until the meat is fully browned and onions have softened. This usually takes about 5–7 minutes. Stir occasionally to break up the beef evenly.
  3. Drain Fat and Add Seasoning: Drain any excess fat from the skillet to reduce greasiness. Then stir in the taco seasoning packet along with 1 cup of salsa to coat the beef mixture. Let it simmer for 2–3 minutes to blend flavors.
  4. Layer Corn Chips: Spread half of the crushed corn chips evenly across the bottom of the prepared baking dish. This forms the crunchy base layer.
  5. Add Beef Mixture: Evenly spread the seasoned beef mixture over the crushed corn chips layer, making sure to cover the area completely.
  6. Top with Cheese: Sprinkle the shredded cheddar cheese over the beef layer to add a melty, savory topping.
  7. Bake the Casserole: Place the casserole in the preheated oven and bake for 15–20 minutes, or until the cheese is fully melted and bubbly, signaling the dish is heated through.
  8. Add Final Toppings: Remove the casserole from the oven and immediately top it with the remaining crushed corn chips for extra crunch, followed by dollops of sour cream, shredded lettuce, and diced tomatoes just before serving.

Notes

  • Add jalapeños or your favorite hot sauce to give the casserole a spicy kick.
  • Incorporate black beans or corn for added texture and flavor diversity.
  • Use gluten-free corn chips to make this casserole suitable for gluten-free diets.
  • For a lighter version, consider using reduced-fat cheese and sour cream.
