Description

A bold and spicy Korean-inspired vegan noodle dish featuring tender ramyeon noodles stir-fried with fresh vegetables in a savory gochujang-based sauce, perfect for a quick and satisfying plant-based meal.

Ingredients

Noodles and Sauce

  • 1 pack ramyeon noodles (without seasoning packet)
  • 1 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1 tsp chili flakes (optional)

Vegetables and Aromatics

  • 1 tbsp oil
  • 2 cloves garlic, minced
  • 1/2 onion, sliced
  • 1 cup cabbage, shredded
  • 1/2 cup carrots, julienned
  • Green onions for garnish

Instructions

  1. Cook Noodles: Boil the ramyeon noodles according to package instructions until just tender, then drain and set aside to remove excess water.
  2. Sauté Aromatics: Heat oil in a pan over medium heat. Add minced garlic and sliced onion, sautéing until they become fragrant and translucent, about 2-3 minutes.
  3. Cook Vegetables: Add shredded cabbage and julienned carrots to the pan. Stir-fry the vegetables until slightly softened but still retain some crunch, approximately 4-5 minutes.
  4. Mix Sauce: Stir in gochujang, soy sauce, sugar, and sesame oil into the vegetable mixture. If using, add chili flakes to adjust the spice level according to your preference. Cook the sauce for 1-2 minutes to combine flavors.
  5. Toss Noodles: Add the drained noodles to the pan with the sauce and vegetables. Toss everything together thoroughly to ensure the noodles are evenly coated with the sauce.
  6. Finish and Serve: Cook the combined noodles and vegetables for an additional 1-2 minutes on medium heat. Garnish with chopped green onions and serve hot for a delicious, spicy Korean-inspired vegan meal.

Notes

  • Adjust the spice level by reducing the amount of gochujang or chili flakes as desired.
  • For additional texture and protein, add tofu or mushrooms during the vegetable sauté step.
  • Sprinkle toasted sesame seeds on top before serving for extra flavor and crunch.
