Description
A cozy, golden-crusted Turkey Pot Pie made with tender leftover turkey, hearty vegetables, and a creamy, flavorful sauce. Perfect for using holiday turkey and bringing comfort food to your table with a delicious, flaky crust.
Ingredients
Filling Ingredients
- 2 cups cooked turkey, diced
- 1 cup frozen mixed vegetables
- 1 cup diced potatoes
- 3 tbsp butter
- 3 tbsp flour
- 1 ½ cups chicken broth
- ½ cup milk or cream
- Salt, pepper, and thyme to taste
Crust
- 1 pie crust (top + bottom or puff pastry)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s at the right temperature when you’re ready to bake the pie.
- Make the Roux: In a saucepan, melt the butter over medium heat. Stir in the flour to form a roux, cooking it gently to remove the raw flour taste and to help thicken your sauce.
- Add Liquids: Slowly whisk in the chicken broth and milk (or cream), stirring continuously until the mixture thickens into a creamy sauce.
- Combine Filling Ingredients: Stir in the cooked turkey, frozen mixed vegetables, and diced potatoes into the thickened sauce. Season the mixture with salt, pepper, and thyme to taste.
- Assemble the Pie: Pour the filling into a prepared pie dish. Cover it with the pie crust, seal the edges securely, and cut slits in the top crust to allow steam to escape during baking.
- Bake the Pie: Place the pie in the preheated oven and bake for 30 to 35 minutes until the crust is golden brown and bubbly.
Notes
- Use rotisserie chicken as a quick shortcut for cooking the turkey.
- Premade pie dough or puff pastry can be used to speed up assembly.
- For creamier sauce, substitute milk with cream.
- Allow the pie to cool slightly before serving for easier slicing.
