Instructions

- Sauté the vegetables: Add the diced onion, sliced carrots, and sliced celery to the pot. Cook until the vegetables have softened, which helps develop the soup’s flavor.
- Add garlic and seasoning: Stir in the minced garlic, 1 teaspoon Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute to release the aromas and blend the flavors.
- Add broth and tomatoes: Pour in 6 cups of chicken broth and the can of diced tomatoes. Bring the mixture to a gentle boil to prepare for cooking the tortellini.
- Cook the tortellini: Add 9 ounces of refrigerated cheese tortellini to the boiling broth. Cook according to the package directions, usually about 5 to 7 minutes, until tender.
