Instructions
- Infuse the broth: Warm the vegetable or chicken broth in a saucepan on low heat. Add a pinch of saffron threads and allow them to steep in the warm broth, releasing their color and aroma while you prepare the other ingredients.
- Sauté aromatics: Heat olive oil and unsalted butter together in a wide pan over medium heat until melted and shimmering. Add the finely chopped onion or shallot and cook for 3–4 minutes, stirring occasionally until the onion is soft and translucent but not browned.
- Toast the rice: Add the Arborio rice to the pan and stir continuously for about 1 minute to toast the grains lightly. This step helps to develop a nutty flavor and prepares the rice to absorb liquids evenly.
- Deglaze with wine: Pour in the dry white wine and cook, stirring frequently, until all the wine has been absorbed by the rice, which typically takes a few minutes. The alcohol will cook off, leaving depth of flavor.
- Add tomatoes: Stir in the crushed tomatoes or passata, mixing well to combine the flavor base of the risotto with the sweetness and acidity of the tomatoes.
- Cook with broth: Begin adding the warm saffron-infused broth, ½ cup at a time. Stir frequently and wait until the liquid is mostly absorbed before adding the next batch. This gradual process allows the rice to release its starches and become creamy. Continue this step for 18–20 minutes or until the rice is tender but still has a slight bite (al dente).
- Finish the risotto: Stir in the freshly grated Parmesan cheese until melted and fully incorporated. Season with salt and freshly ground black pepper to taste. Remove the pan from heat and let the risotto rest for 1–2 minutes to thicken slightly.
