  • 1 1/2 cups jasmine or long-grain rice, rinsed
  • 2 1/2 cups chicken stock
  • 1/3 cup teriyaki sauce


Instructions

  1. Preheat oven: Preheat your oven to 180°C (350°F) to prepare for baking.
  2. Prepare the base: Spread the rinsed rice evenly in a large baking dish, creating an even layer as the base of your dish.
  3. Add chicken and vegetables: Scatter the diced chicken thigh, finely sliced carrot, and sliced red capsicum over the rice layer evenly.
  4. Add liquids and combine: Pour the chicken stock and teriyaki sauce over the rice, chicken, and vegetables. Gently stir to combine ingredients and distribute sauce without disturbing the rice too much.
