Description

This taco bubble up bake is an easy and comforting weeknight casserole featuring biscuit dough, seasoned ground beef, salsa, and melted cheese. It combines all the favorite taco flavors into one bubbly, cheesy dish that’s perfect for family dinners or meal prep.

Ingredients

Meat and Seasoning

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/2 cup water

Main Components

  • 1 can (16 oz) refrigerated biscuit dough, cut into quarters
  • 1 cup salsa (or enchilada sauce)
  • 1 cup canned black beans, rinsed and drained (optional)
  • 1 cup frozen corn (optional)
  • 2 cups shredded Mexican blend cheese

Toppings

  • Sour cream
  • Shredded lettuce
  • Diced tomatoes
  • Jalapeños
  • Cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Ground Beef: In a skillet over medium heat, cook the ground beef until it is browned and no longer pink, then drain off excess fat to reduce greasiness.
  3. Season Beef: Stir in the taco seasoning packet and 1/2 cup water. Allow the mixture to simmer for 2-3 minutes until slightly thickened and well combined.
  4. Combine Ingredients: In a large bowl, mix the cooked and seasoned beef with salsa, rinsed black beans, and frozen corn, if using, creating a flavorful filling.
  5. Add Biscuit Dough: Add the quartered biscuit dough pieces to the beef mixture and toss gently to coat each biscuit piece evenly.
  6. Prepare for Baking: Pour the entire mixture into the prepared baking dish, spreading it out evenly for uniform cooking.
  7. Add Cheese: Sprinkle the shredded Mexican blend cheese evenly over the top of the biscuit and beef mixture.
  8. Bake: Bake uncovered in the preheated oven for 25-30 minutes, or until the biscuit dough is cooked through and the cheese is bubbly and golden.
  9. Serve: Let the dish cool slightly before serving. Top with your favorite taco toppings such as sour cream, shredded lettuce, diced tomatoes, jalapeños, and cilantro.

Notes

  • Ensure biscuits are fully cooked by testing the center with a toothpick; it should come out clean.
  • You can swap salsa with enchilada sauce for a saucier casserole.
  • To make the dish lighter, use reduced-fat cheese and lean ground turkey or chicken.
  • This dish reheats well, making it ideal for meal prep and leftovers.
