Ingredients
Meat and Seasonings
- 1 lb ground beef (or ground turkey/chicken)
- 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- 1/2 cup water
Main Components
- 1 can (16 oz) refrigerated biscuit dough, cut into quarters
- 1 cup salsa (or enchilada sauce)
- 1 cup canned black beans, rinsed and drained (optional)
- 1 cup frozen corn (optional)
- 2 cups shredded Mexican blend cheese
Toppings
- Sour cream
- Shredded lettuce
- Diced tomatoes
- Jalapeños
- Cilantro
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to ensure the casserole doesn’t stick during baking.
- Cook Ground Beef: In a skillet over medium heat, cook the ground beef until it is fully browned. Once cooked, drain any excess fat to keep the dish from becoming greasy.
- Season the Meat: Stir in the taco seasoning packet and half a cup of water into the browned beef. Let it simmer for 2 to 3 minutes until the mixture thickens and the flavors meld together.
- Mix Ingredients: In a large mixing bowl, combine the cooked seasoned beef with salsa, black beans, and frozen corn if you are using them. Stir well to combine all the ingredients evenly.
- Add Biscuit Dough: Add quartered biscuit dough pieces to the beef mixture and gently toss them so each biscuit piece is coated with the sauce and ingredients.
- Assemble in Baking Dish: Pour the entire mixture into the prepared baking dish. Spread it out evenly so it bakes uniformly.
- Add Cheese: Sprinkle the shredded Mexican blend cheese evenly over the top of the casserole, covering the entire surface for a gooey cheesy topping.
- Bake: Place the dish in the oven uncovered and bake for 25 to 30 minutes, or until the biscuit dough is cooked through and the cheese is bubbly and lightly golden.
- Serve: Allow the bake to cool slightly before serving. Top with your favorite taco toppings such as sour cream, shredded lettuce, diced tomatoes, jalapeños, and fresh cilantro for added flavor and freshness.
Notes
- Use a toothpick inserted into the center biscuits to check doneness; it should come out clean.
- For a saucier dish, substitute salsa with enchilada sauce.
- To make this dish lighter, use reduced-fat cheese and lean ground turkey instead of beef.
- This recipe is great for meal prep and reheats well in the microwave.
