Description

A silky, lightly sweet soup made with sweet potatoes and creamy coconut milk.


Ingredients

Soup:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 lbs sweet potatoes, peeled & diced
  • 3 cups vegetable broth
  • 1 can coconut milk
  • 1 tsp ginger, grated
  • 1/2 tsp curry powder
  • Salt & pepper to taste


Instructions

  1. Sauté onion and ginger: In a pot, sauté the onion and grated ginger in olive oil until fragrant.
  2. Add sweet potatoes and broth: Add the diced sweet potatoes and vegetable broth to the pot. Simmer for about 20 minutes until the sweet potatoes are tender.
  3. Blend and add coconut milk: Using a blender, blend the soup until smooth. Stir in the coconut milk and curry powder. Season with salt and pepper to taste.
