Description

Ingredients

Vegetables & Aromatics

  • 2 tablespoons olive oil
  • 1 medium onion, diced

  • 2 medium sweet potatoes, peeled and cubed

  • 2 tablespoons chili powder

  • Salt and black pepper, to taste
  • 1 teaspoon dried oregano

Liquids & Canned Goods

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups vegetable broth
  • Juice of 1/2 lime

Optional Garnish

  • Fresh cilantro, chopped


Instructions

  1. Heat oil and sauté aromatics: Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 4-5 minutes. Stir in the minced garlic and diced red bell pepper and cook for an additional 1–2 minutes until fragrant and slightly softened.
  2. Add spices: Stir in chili powder, ground cumin, smoked paprika, salt, and black pepper. Cook the spices with the vegetables for about 1 minute to release their flavors and aromas.
  3. Add main ingredients and liquids: Add the cubed sweet potatoes, drained black beans, diced tomatoes (with juices), vegetable broth, and dried oregano to the pot. Stir well to combine all ingredients evenly.
  4. Simmer the chili: Bring the mixture to a boil over medium-high heat, then reduce the heat to maintain a gentle simmer. Let it cook uncovered for 25–30 minutes, stirring occasionally, until the sweet potatoes are tender and the chili has thickened.
  5. Finish and serve: Stir in the lime juice to brighten the flavors and adjust seasoning with additional salt or pepper if needed. Garnish with chopped fresh cilantro before serving for added freshness and color.
