Ingredients

  • 1½ cups pearl barley
  • 2 cups sweet corn kernels

Lemon Dressing

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and black pepper, to taste


Instructions

  1. Cook the barley: Rinse 1½ cups pearl barley under cold water. Cook it in a pot of boiling water according to package directions, usually about 25-30 minutes until tender but chewy. Drain and transfer to a large bowl to cool.
  2. Prepare the corn: If using fresh corn, cook the 2 cups of sweet corn kernels in boiling water for about 3-5 minutes until tender, then drain and cool. If using pre-cooked or frozen corn, ensure it is thawed and ready.
  3. Combine salad ingredients: Add the cooked barley, cooled corn, 2 cups halved cherry tomatoes, diced cucumber, finely chopped red onion, and chopped fresh parsley and basil to the large bowl. Mix gently to combine.
  4. Make the dressing: In a small bowl, whisk together 3 tablespoons olive oil, 2 tablespoons lemon juice, 1 teaspoon Dijon mustard, and salt and black pepper to taste until emulsified and well combined.
  5. Toss the salad: Pour the dressing over the barley salad mixture and toss thoroughly to coat all ingredients evenly with the lemon dressing.
  6. Chill and serve: Cover the salad and refrigerate for at least 20 minutes to allow flavors to meld. Serve chilled or at room temperature.
