Ingredients
Chicken
- 4 boneless chicken breasts
Filling
- 4 oz cream cheese, softened
- ½ cup shredded mozzarella cheese
- ½ cup spinach, chopped
- 1 tsp garlic powder
Seasoning & Cooking
- Salt and pepper, to taste
- 1 tbsp olive oil
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready when your chicken is seared and stuffed.
- Create Chicken Pockets: Using a sharp knife, carefully cut a pocket into the side of each boneless chicken breast, being careful not to cut all the way through.
- Prepare Filling: In a bowl, thoroughly mix softened cream cheese, shredded mozzarella, chopped spinach, and garlic powder until well combined.
- Stuff Chicken: Spoon the cheese and spinach mixture into each chicken pocket, then secure the opening with toothpicks to keep the filling inside during cooking.
- Season Chicken: Sprinkle salt and pepper evenly over the outside surfaces of the stuffed chicken breasts.
- Sear Chicken: Heat olive oil in a skillet over medium-high heat and sear each chicken breast for 3 to 4 minutes on each side until golden brown to lock in flavors.
- Bake to Finish: Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for 20 minutes or until the chicken is cooked through and juices run clear.
Notes
- Use toothpicks to secure the chicken pockets and keep the filling from spilling out during cooking.
- For variation, try adding sun-dried tomatoes or mushrooms into the filling for extra flavor.
