Description

Sweet, savory, and slightly sticky chicken served over fluffy rice with fresh steamed vegetables. This easy-to-make chicken rice bowl combines tender diced chicken coated in a honey-soy glaze with steamed broccoli and crisp carrots, making it perfect for quick weeknight dinners or meal prep.

Ingredients

For the Chicken:

  • 2 chicken breasts, diced
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp brown sugar
  • 1 tbsp garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp oil

For the Bowl:

  • 2 cups cooked rice
  • 1 cup broccoli, steamed
  • 1 carrot, sliced
  • 1 tbsp sesame seeds
  • 1 green onion, chopped

Instructions

  1. Cook the Chicken: Heat 1 tablespoon of oil in a pan over medium heat. Add the diced chicken breasts and cook until lightly browned on all sides, about 5-7 minutes, stirring occasionally to ensure even cooking.
  2. Sauté Aromatics: Add the minced garlic and grated ginger to the pan with the chicken. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  3. Add Sauce Ingredients: Stir in 2 tablespoons soy sauce, 2 tablespoons honey, and 1 tablespoon brown sugar. Mix well to combine and coat the chicken evenly.
  4. Simmer the Chicken: Reduce the heat to low and let the chicken simmer in the sauce for another 5-7 minutes, stirring occasionally, until the sauce thickens and becomes sticky, fully coating the chicken pieces.
  5. Assemble the Bowls: Divide 2 cups of cooked rice evenly into serving bowls. Top each with steamed broccoli, sliced carrot, and the sticky chicken mixture.
  6. Garnish and Serve: Sprinkle 1 tablespoon sesame seeds and chopped green onion on top of each bowl for added flavor and crunch. Serve warm.

Notes

  • Add chili flakes to the sauce if you want to add a spicy kick.
  • For a vegetarian option, substitute the chicken with firm tofu and cook similarly.
  • Use brown rice or cauliflower rice as a healthier alternative.
  • Make extra sauce and drizzle over green veggies for enhanced flavor.
