Ingredients
Tomato Mixture:
- 2 lbs tomatoes, halved
 - 2 red bell peppers, halved
 - 1 onion, quartered
 - 4 cloves garlic
 - 2 tbsp olive oil
 
Soup Base:
- 4 cups vegetable broth
 - 1 tsp chili flakes
 - 1 tsp smoked paprika
 - Salt & pepper, to taste
 
Instructions
- Roast Vegetables: Preheat oven to 400°F. Place tomatoes, peppers, onion, and garlic on a baking sheet. Drizzle with olive oil, season with salt and pepper. Roast for 25 minutes.
 - Blend: Transfer roasted vegetables to a blender. Add broth, chili flakes, and smoked paprika. Blend until smooth.
 - Simmer: Pour mixture into a pot. Simmer for 10 minutes. Adjust seasoning with salt and pepper.
