Instructions
- Cook Noodles: Cook the rice vermicelli noodles according to the package instructions. Once cooked, drain them and rinse thoroughly under cold water to stop the cooking process and prevent sticking.
- Toss Noodles with Sauce: In a bowl, combine the cooked noodles with sriracha and sweet chili sauce, mixing well to evenly coat the noodles with a spicy, sweet flavor.
- Soften Rice Paper: Fill a shallow dish with warm water. Soak one rice paper wrapper at a time for about 10 to 15 seconds until it becomes soft and pliable but not too sticky.
- Assemble Rolls: Place the softened rice paper on a clean, flat surface. Add a small handful of the prepared noodles along with shredded carrots, julienned cucumber, sliced red bell pepper, shredded purple cabbage, fresh cilantro, mint leaves, and sliced green onions in the center of the wrapper.
