Ingredients
For the Soup:
- 2 tbsp butter
 - 1 onion, diced
 - 2 apples, peeled & chopped
 - 3 cups pumpkin purée
 - 4 cups vegetable broth
 - 1/2 tsp cinnamon
 - 1/4 tsp nutmeg
 - 1/2 cup cream or coconut milk
 
Instructions
- Sauté onion and apples: In a pot, melt butter and sauté diced onion and chopped apples until softened.
 - Add pumpkin and spices: Stir in pumpkin purée, vegetable broth, cinnamon, and nutmeg.
 - Simmer: Let the soup simmer for about 15 minutes.
 - Blend and add cream: Blend the soup until smooth, then stir in cream or coconut milk.
