Description

Spiced Christmas Granola Mix is a festive, crunchy blend of oats, nuts, and warm holiday spices baked to golden perfection. Lightly sweetened with maple syrup or honey and infused with cozy flavors like cinnamon, ginger, and nutmeg, this granola is ideal for breakfast, snacking, or gifting during the holiday season. The addition of dried cranberries adds a delightful tartness, while shredded coconut and a mix of nuts provide texture and richness.

Ingredients

Dry Ingredients

  • 3 cups rolled oats
  • 1 cup chopped almonds or pecans
  • 1/2 cup walnuts or cashews
  • 1/2 cup shredded coconut
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup maple syrup or honey
  • 1/3 cup coconut oil, melted
  • 1 teaspoon vanilla extract

Add-ins

  • 1/2 cup dried cranberries or raisins

Instructions

  1. Preheat Oven: Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, combine rolled oats, chopped nuts, shredded coconut, ground cinnamon, ground ginger, nutmeg, cloves, and salt. Stir to distribute the spices evenly throughout the mixture.
  3. Prepare Wet Mixture: In a separate bowl, whisk together the maple syrup or honey, melted coconut oil, and vanilla extract until well combined to create a spiced sweet binder.
  4. Combine Ingredients: Pour the wet ingredients over the dry mixture and stir thoroughly until all the oats and nuts are evenly coated with the syrup mixture.
  5. Spread & Bake: Spread the granola mixture evenly across the prepared baking sheet in a flat layer to ensure uniform baking.
  6. Bake & Stir: Bake for 25 to 30 minutes, stirring the granola halfway through the baking time to promote even toasting and prevent burning. Bake until golden and aromatic.
  7. Cool & Add Fruit: Remove the granola from the oven and allow it to cool completely on the baking sheet. Once cooled, stir in the dried cranberries or raisins for a chewy, sweet contrast.
  8. Break & Store: Break the granola into clusters or bite-sized pieces. Transfer to an airtight container for storage.

Notes

  • Granola crisps up as it cools, so wait before storing or eating for best texture.
  • For extra sweetness and richness, add white chocolate chips after the granola has cooled.
  • Store the granola in an airtight container at room temperature for up to 2 weeks to maintain freshness.
