Description

A bold and hearty soup packed with ground beef, beans, vegetables, and smoky spices. This comforting dish is full of rich flavors and perfect for a filling family meal.

Ingredients

Meat and Oils

  • 1 pound ground beef
  • 1 tablespoon olive oil

Vegetables and Aromatics

  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 cup potatoes, diced
  • 1 cup carrots, sliced

Liquids and Canned Goods

  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained

Spices and Seasonings

  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste

Instructions

  1. Heat the oil and cook the beef: Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat to reduce greasiness.
  2. Sauté onion and garlic: Add diced onion and minced garlic to the pot and sauté until they become soft and fragrant, about 2-3 minutes.
  3. Add vegetables and liquids: Stir in diced potatoes, sliced carrots, diced tomatoes, and beef broth, combining everything evenly in the pot.
  4. Add beans, corn, and spices: Incorporate drained kidney beans and corn along with smoked paprika, chili powder, cumin, salt, and black pepper. Stir well to distribute spices.
  5. Simmer the soup: Bring the mixture to a boil, then reduce heat to low and let it simmer uncovered for 25–30 minutes, or until the vegetables are tender and flavors meld together.
  6. Adjust seasoning and serve: Taste the soup and adjust salt or spices as needed. Serve hot, optionally garnished with shredded cheese or fresh herbs.

Notes

  • Add a dash of hot sauce for extra heat.
  • Top with shredded cheese or fresh herbs if desired.
  • Substitute ground turkey for a lighter version.
