Description
A classic Southern gumbo made easy in the slow cooker, filled with smoky sausage, tender chicken, fresh vegetables, and bold Cajun spices in a rich, savory broth. Perfect for a comforting, flavorful meal with minimal hands-on time.
Ingredients
Protein
- 1 lb chicken thighs, chopped
- 1/2 lb smoked sausage, sliced
Vegetables & Aromatics
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1/2 cup okra, sliced
- 1 can diced tomatoes (14.5 oz)
Liquids & Seasonings
- 2 cups chicken broth
- 2 tablespoons flour
- 2 tablespoons oil (vegetable or canola)
- 1 teaspoon Cajun seasoning
- Salt and black pepper to taste
Instructions
- Make the Roux: In a pan over medium heat, warm the oil and stir in the flour. Continuously stir the mixture to form a roux, cooking until it turns a light brown color, which adds a deep, nutty flavor base to the gumbo.
- Transfer Roux to Slow Cooker: Carefully transfer the prepared roux from the pan into the slow cooker pot to begin layering flavors.
- Add Ingredients: Add chopped chicken thighs, sliced smoked sausage, chopped onion, chopped bell pepper, minced garlic, chicken broth, diced tomatoes, sliced okra, and Cajun seasoning into the slow cooker. Stir well to combine all ingredients evenly with the roux.
- Cook the Gumbo: Cover the slow cooker with its lid and cook on low heat for 6 to 7 hours, or on high heat for 3 to 4 hours, allowing the flavors to meld and the meats to become tender.
- Season and Serve: Before serving, season the gumbo with salt and freshly ground black pepper to taste. Serve hot, optionally over cooked white rice for a traditional presentation.
Notes
- The roux is essential for authentic gumbo flavor; do not skip this step.
- Adjust the Cajun seasoning amount to control the spice level according to preference.
- For additional seafood flavor, add peeled shrimp during the last 30 minutes of cooking in the slow cooker.
- Serve gumbo with rice, crackers, or crusty bread for a classic Southern experience.
