Description
Tender, slow-cooked beef chuck roast infused with a rich balsamic glaze, garlic, and herbs. This comforting American classic slow cooker recipe is perfect for family dinners and pairs wonderfully with mashed potatoes or roasted vegetables, delivering a succulent and flavorful main course with minimal effort.
Ingredients
Beef Roast
- 3–4 lb beef chuck roast
Sauce Mixture
- 1 cup beef broth
- 1/2 cup balsamic vinegar
- 2 tablespoons soy sauce (use gluten-free if needed)
- 3 tablespoons brown sugar
- 4 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
Optional Thickener
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Prepare the roast: Place the beef chuck roast into the slow cooker container, ensuring it sits evenly to cook uniformly.
- Make the sauce: In a medium bowl, whisk together beef broth, balsamic vinegar, soy sauce, brown sugar, minced garlic, dried rosemary, dried thyme, and black pepper until fully combined.
- Add sauce to roast: Pour the prepared balsamic mixture evenly over the beef roast in the slow cooker, coating it thoroughly.
- Slow cook: Cover the slow cooker lid and cook the roast on low heat for 8 to 9 hours, or on high heat for 4 to 5 hours, until the meat becomes tender and easily shreds with a fork.
- Optional thickening: If a thicker gravy is desired, remove the roast temporarily. In a small bowl, whisk cornstarch with water to create a slurry. Stir this slurry into the slow cooker sauce, then switch the cooker to high and cook uncovered for 15 more minutes until the sauce thickens.
- Serve: Slice or shred the beef roast and plate it, generously spooning the balsamic gravy over the top to serve.
Notes
- For enhanced depth of flavor, sear the roast in a hot skillet before placing it into the slow cooker.
- Add hearty vegetables like carrots and potatoes during the last 4 hours of cooking for a complete one-pot meal.
- Store any leftovers in an airtight container in the refrigerator for up to 4 days.
