Description

A quick and flavorful skillet meal featuring tender chicken breasts and crisp broccoli florets cooked in a sweet and savory homemade teriyaki sauce, perfect for a wholesome weeknight dinner.

Ingredients

Protein & Vegetables

  • 2 chicken breasts, sliced
  • 2 cups broccoli florets

Sauce & Seasonings

  • 1 tbsp oil
  • 3 cloves garlic, minced
  • ¼ cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp ginger, grated
  • 1 tsp cornstarch + 2 tbsp water (cornstarch slurry)

Instructions

  1. Prepare the Chicken: Heat the oil in a large skillet over medium-high heat. Add the sliced chicken breasts and cook until they are browned on both sides and cooked through, about 6-8 minutes.
  2. Add the Broccoli: Add the broccoli florets to the skillet and sauté together with the chicken until the broccoli is tender-crisp but still bright green, about 4-5 minutes.
  3. Incorporate Aromatics: Stir in the minced garlic and grated ginger to the skillet. Cook for 1-2 minutes until fragrant, making sure not to burn the garlic.
  4. Make the Teriyaki Sauce: In a small bowl, mix together the soy sauce, honey, and rice vinegar. Pour this sauce mixture into the skillet, tossing everything to coat evenly.
  5. Thicken the Sauce: Add the cornstarch slurry (1 tsp cornstarch mixed with 2 tbsp water) to the skillet. Stir constantly for about 1-2 minutes until the sauce thickens and becomes glossy, coating the chicken and broccoli beautifully.
  6. Serve: Remove from heat and serve the teriyaki chicken and broccoli hot over steamed rice or noodles as desired.

Notes

  • Add bell peppers or snap peas for added vegetable variety and color.
  • Substitute maple syrup for honey as a natural sweetener alternative.
  • Ensure to stir the sauce continuously when adding the cornstarch slurry to avoid clumps.
  • Use low sodium soy sauce to reduce overall sodium content if preferred.
  • Ginger can be adjusted to taste or substituted with ground ginger powder in a pinch.
