Ingredients
Chicken
- 4 bone-in, skin-on chicken thighs
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Peaches & Sauce
- 3 ripe peaches, sliced into wedges
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons balsamic vinegar
- 2 garlic cloves, minced
- 1 teaspoon fresh thyme leaves
- 1/2 cup chicken broth
- 2 tablespoons fresh basil, chopped
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting.
- Season the Chicken: Pat the chicken thighs dry to ensure crisp skin and season evenly with paprika, salt, and black pepper for flavor.
- Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down and sear for 5–7 minutes until the skin is golden and crispy.
- Flip Chicken: Turn the chicken and cook for an additional 2 minutes on the other side to develop a good crust.
- Prepare for Roasting: Remove excess oil from the skillet if necessary to prevent excess grease during roasting.
- Add Peaches: Arrange the sliced peaches around the chicken in the skillet for roasting together.
- Make Sauce: In a bowl, whisk together honey, balsamic vinegar, minced garlic, thyme leaves, and chicken broth until combined.
- Add Sauce to Skillet: Pour the sauce mixture evenly over the chicken and peaches, allowing flavors to meld during roasting.
- Roast in Oven: Transfer the skillet to the preheated oven and roast for 20–25 minutes until the chicken is cooked through (internal temperature 165°F/74°C) and peaches are tender.
- Garnish and Serve: Remove skillet from oven, sprinkle fresh chopped basil on top, and serve the chicken and peaches with the pan sauce.
Notes
- Use firm-ripe peaches so they hold their shape during cooking and do not turn mushy.
- Chicken breasts can be substituted but monitor and adjust cooking time as they cook faster than thighs.
- Adding sliced red onion to the skillet before roasting adds extra depth and sweetness.
- Serve this dish with side options such as rice, couscous, roasted potatoes, or a fresh green salad for a complete meal.
