Ingredients
Frittata Base
- 1 bottle JUST Egg (about 12 oz)
- 1 tablespoon olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
Vegetables
- 1/2 cup diced bell peppers
- 1/2 cup chopped spinach
- 1/4 cup diced onion
- 1/4 cup cherry tomatoes, halved
Optional
- 1/4 cup vegan cheese (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the frittata.
- Sauté Vegetables: In an oven-safe skillet, heat the olive oil over medium heat. Add diced onions and bell peppers, sautéing them until they become soft and fragrant, about 3–4 minutes.
- Cook Spinach: Add the chopped spinach to the skillet and cook just until wilted, which should take about 1–2 minutes. Stir occasionally to combine with other vegetables.
- Add JUST Egg: Pour the entire bottle of JUST Egg evenly over the cooked vegetables in the skillet. Gently stir to mix the vegetables evenly throughout the liquid egg substitute.
- Season and Add Toppings: Sprinkle the garlic powder, black pepper, and vegan cheese (if using) evenly over the top. Then distribute the halved cherry tomatoes evenly across the mixture for bursts of flavor and color.
- Bake: Transfer the skillet to the preheated oven and bake for 15–18 minutes or until the frittata is fully set and the top is slightly golden.
- Cool and Serve: Remove the skillet from the oven and allow the frittata to cool slightly for about 5 minutes before slicing and serving. This will help it firm up for cleaner cuts.
