Ingredients

For the Shrimp

  • lbs large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • 1 tsp kosher salt
  • ½ tsp black pepper

Slaw

  • 3 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • ¼ cup chopped cilantro
  • Juice of 1 lime
  • 1 tbsp olive oil
  • Pinch of salt

Lime Sauce

  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 tbsp lime juice
  • 1 tsp hot sauce (optional)
  • ½ tsp garlic powder

For Serving

  • 8 small corn tortillas
  • 1 avocado, sliced
  • Crumbled cotija cheese
  • Fresh cilantro
  • Lime wedges

Instructions

  1. Season the Shrimp: Toss the peeled and deveined shrimp with olive oil, chili powder, smoked paprika, garlic powder, ground cumin, kosher salt, and black pepper until evenly coated.
  2. Cook the Shrimp: Heat a large skillet over medium-high heat and cook the shrimp for 2 to 3 minutes per side until they turn pink and are cooked through, being careful not to overcook.
  3. Prepare the Slaw: In a mixing bowl, combine shredded green cabbage, purple cabbage, chopped cilantro, lime juice, olive oil, and a pinch of salt. Toss well to mix all ingredients evenly.
  4. Make the Lime Sauce: Whisk together sour cream, mayonnaise, lime juice, optional hot sauce, and garlic powder until the sauce is smooth and creamy.
  5. Warm the Tortillas: Heat the corn tortillas in a dry skillet over medium heat or directly over a gas flame until they are warmed through and pliable.
  6. Assemble the Tacos: Fill each warmed tortilla with a layer of slaw, cooked shrimp, sliced avocado, and sprinkle with crumbled cotija cheese.
  7. Finish and Serve: Drizzle each taco with the creamy lime sauce, garnish with fresh cilantro leaves, and serve alongside lime wedges for squeezing over top.

Notes

  • Do not overcook the shrimp or they will become rubbery and tough.
  • Flour tortillas can be substituted for corn tortillas based on preference.
  • Adding pico de gallo or mango salsa can provide an extra fresh and vibrant flavor balance.
