Description

Shrimp Boil Foil Packets offer a delicious and easy meal combining juicy shrimp, smoky sausage, sweet corn, and tender baby potatoes all infused with garlic butter and Old Bay seasoning. Perfect for grilling or baking, these foil packets make a flavorful, fuss-free option for summer dinners or camping trips.

Ingredients

Seafood and Meat

  • 1 lb large shrimp, peeled and deveined
  • 12 oz smoked sausage, sliced

Vegetables

  • 12 oz baby potatoes, halved and parboiled
  • 2 ears corn, cut into 4 pieces each

Seasoning and Sauce

  • 4 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tsp Old Bay seasoning
  • ½ tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley
  • Lemon wedges for serving

Instructions

  1. Preheat grill or oven: Set your grill or oven to 400°F (204°C) to prepare for cooking the foil packets evenly and thoroughly.
  2. Combine main ingredients: In a large bowl, put together the peeled and deveined shrimp, sliced smoked sausage, halved parboiled baby potatoes, and corn pieces.
  3. Prepare seasoning mixture: In a small bowl, whisk melted butter, olive oil, minced garlic, Old Bay seasoning, paprika, salt, and black pepper until well blended to coat the ingredients with rich flavor.
  4. Mix ingredients with seasoning: Pour the butter and spice mixture over the shrimp, sausage, potatoes, and corn, tossing carefully to coat everything evenly.
  5. Assemble foil packets: Divide the mixture into four equal portions and place each portion onto a large sheet of heavy-duty foil. Seal each foil packet tightly to lock in juices and flavor during cooking.
  6. Cook the packets: Place the sealed packets on the grill or in the oven and cook for 15–18 minutes, until the shrimp turns opaque and the vegetables are tender.
  7. Serve and garnish: Carefully open the hot foil packets to avoid steam burns, sprinkle chopped fresh parsley on top, and serve immediately with lemon wedges for a bright finishing touch.

Notes

  • Parboiling the potatoes prior to assembling helps ensure they cook evenly and become tender by the time the shrimp is done.
  • For a spicier version, swap the smoked sausage with andouille sausage.
  • Be extremely cautious when opening the foil packets, as hot steam will escape and can cause burns.
