Ingredients
Seafood and Meat
- 1 lb large shrimp, peeled and deveined
- 12 oz smoked sausage, sliced
Vegetables
- 1½ lbs baby potatoes, halved
- 3 ears corn, cut into thirds
Seasoning and Oil
- 3 tbsp olive oil
- 4 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 2 tsp Old Bay seasoning
- 1 tsp smoked paprika
- ½ tsp onion powder
- ½ tsp black pepper
- 1 tsp kosher salt
- 2 tbsp chopped fresh parsley
- Lemon wedges, for serving
Instructions
- Preheat the oven: Set your oven to 425°F (220°C) and allow it to fully preheat to ensure even roasting of all ingredients.
- Boil the potatoes: Place the halved baby potatoes in boiling water and cook for 8 to 10 minutes until they become slightly tender but not fully cooked. Drain thoroughly to avoid excess moisture.
- Combine main ingredients: In a large mixing bowl, toss together the slightly cooked potatoes, sliced smoked sausage, and cut sweet corn pieces.
- Prepare the seasoning mixture: In a separate bowl, whisk together olive oil, melted butter, minced garlic, Old Bay seasoning, smoked paprika, onion powder, kosher salt, and black pepper to create a flavorful garlic butter sauce.
- Toss and arrange on sheet pan: Pour half of the seasoning mixture over the potato, sausage, and corn mixture and toss until everything is evenly coated. Spread the mixture in a single layer on a large sheet pan.
- Roast initial ingredients: Place the sheet pan in the preheated oven and roast for 20 minutes, allowing the potatoes to finish cooking and ingredients to start caramelizing.
- Add shrimp and finish roasting: Remove the pan from the oven and evenly add the peeled shrimp on top of the roasted ingredients. Drizzle the remaining butter seasoning over the shrimp, then return the pan to the oven and roast for an additional 8 to 10 minutes until the shrimp are bright pink and fully cooked through.
- Garnish and serve: Remove from oven, sprinkle chopped fresh parsley over the entire dish, and serve immediately with lemon wedges on the side for squeezing over the shrimp boil.
Notes
- Use extra-large shrimp to prevent overcooking and keep them juicy.
- For a deluxe seafood boil, consider adding crab legs to the sheet pan along with other ingredients.
- Serve with crusty bread to soak up the flavorful buttery sauce left on the pan.
