Ingredients
Salmon and Marinade
- 4 salmon fillets, about 150 g each
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 lemon, juiced
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp ground coriander
- ½ tsp salt
- ¼ tsp black pepper
Vegetables & Garnish
- 1 small red onion, sliced
- 1 bell pepper, sliced
- 1 cup cherry tomatoes
- 2 tbsp fresh parsley, chopped
- Lemon wedges, for serving
Instructions
- Preheat and prepare the pan: Preheat your oven to 200°C (400°F) and line a large sheet pan with parchment paper to prevent sticking and ease cleanup.
- Arrange the salmon: Place the salmon fillets evenly spaced on the prepared sheet pan.
- Make the marinade: In a small bowl, whisk together olive oil, minced garlic, lemon juice, ground cumin, paprika, ground coriander, salt, and black pepper until well combined.
- Brush marinade on salmon: Generously brush the prepared spice and lemon mixture over each salmon fillet to coat them with flavor.
- Add vegetables: Arrange the sliced red onion, bell pepper, and cherry tomatoes around the salmon on the sheet pan for even roasting.
- Roast the salmon and vegetables: Place the sheet pan in the oven and roast for 12 to 16 minutes, depending on the thickness of the fillets, until the salmon flakes easily with a fork and the vegetables are tender.
- Garnish and serve: Sprinkle the chopped fresh parsley over the cooked salmon and vegetables. Serve immediately with lemon wedges on the side to squeeze over the top for added brightness.
Notes
- Serve the roasted salmon and vegetables with rice, couscous, quinoa, or a fresh Lebanese salad for a complete meal.
- For an even more intense flavor, marinate the salmon in the spice mixture for 20 to 30 minutes before roasting.
- Avoid overcooking the salmon to ensure it remains moist and tender; it should flake easily but still be juicy inside.
