Ingredients

Salmon and Seasoning

  • 4 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • Juice and zest of 2 limes

  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper

Vegetables

  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper to prevent sticking and for easy cleanup.
  2. Make Chili-Lime Mixture: In a small bowl, whisk together olive oil, lime juice, lime zest, chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper until well combined to create a flavorful marinade and seasoning.
  3. Prepare Salmon and Vegetables: Arrange the salmon fillets on the lined sheet pan spaced evenly. Place broccoli florets, sliced red bell pepper, and sliced zucchini around the salmon to roast together.
  4. Coat with Seasoning: Brush the salmon fillets generously with half of the chili-lime mixture to infuse flavor. Toss the vegetables with the remaining half of the mixture for an even coating.
