Instructions

  1. Prepare the Egg Mixture: In a bowl, whisk together eggs, milk, salt, and pepper until fully blended and slightly frothy to ensure fluffiness.
  2. Sauté Vegetables: Heat butter or oil in a nonstick skillet over medium heat. Add the diced bell peppers, onions, and mushrooms and sauté until softened, about 3 minutes. Then add the chopped spinach and cook just until wilted.
  3. Pour Eggs Over Vegetables: Pour the egg mixture into the skillet, tilting the pan to distribute it evenly over the sautéed vegetables.
  4. Cook the Omelet Base: Let the eggs cook undisturbed for 1–2 minutes until the edges begin to set.
  5. Lift Edges: Gently lift the edges of the omelet with a spatula to allow the uncooked eggs to flow underneath and cook evenly.
  6. Add Cheese: When the eggs are mostly set but slightly runny on top, sprinkle the shredded cheese over half of the omelet.
  7. Fold and Finish Cooking: Fold the omelet in half over the cheese and cook for another 1–2 minutes until the cheese melts and the eggs are cooked through.
