Description

This Sausage and Veggies Skillet is a quick and easy one-pan meal featuring juicy smoked or chicken sausage combined with vibrant vegetables such as bell peppers, zucchini, broccoli, and cherry tomatoes. Infused with garlic and Italian-inspired seasonings, this dish delivers a hearty, flavorful dinner with minimal cleanup, perfect for busy weeknights.

Ingredients

Sausage

  • 1 lb (450 g) smoked sausage or chicken sausage, sliced into rounds
  • 1 tablespoon olive oil

Vegetables

  • 1 medium bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 small red onion, sliced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced

Seasonings & Extras

  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Grated Parmesan (optional)

Instructions

  1. Cook the sausage: Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook for 4–5 minutes, turning occasionally, until browned. Remove the sausage from the skillet and set aside.
  2. Cook the vegetables: In the same skillet, add the bell pepper, zucchini, red onion, and broccoli. Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften but are still slightly crisp.
  3. Add the tomatoes and garlic: Stir in the halved cherry tomatoes and minced garlic. Cook for 2 minutes to allow the flavors to meld and the garlic to become fragrant.
  4. Season: Sprinkle in the Italian seasoning, smoked paprika, onion powder, salt, black pepper, and red pepper flakes if using. Toss everything together to evenly distribute the seasonings.
  5. Combine: Return the browned sausage to the skillet with the vegetables. Cook for another 2–3 minutes until the sausage is heated through and the vegetables reach a tender-crisp texture.
  6. Finish: Remove the skillet from heat and drizzle fresh lemon juice over the mixture. Garnish with chopped fresh parsley and grated Parmesan cheese if desired.
  7. Serve: Serve the sausage and veggies skillet hot on its own or over rice, pasta, quinoa, or with crusty bread for a complete meal.

Notes

  • Use smoked sausage, turkey sausage, chicken sausage, or any other fully cooked sausage you prefer.
  • Add mushrooms, green beans, spinach, or cauliflower for extra vegetable variety and nutrition.
  • For a spicy kick, use hot Italian sausage and increase the amount of red pepper flakes.
  • Store leftovers in an airtight container and refrigerate for up to 3 days.
  • Reheat leftovers gently in a skillet over medium heat or in the microwave to preserve texture and flavor.
