Description

Salmon, Egg, and Avocado Breakfast Tacos are fresh, protein-packed morning tacos made with flaky salmon, fluffy scrambled eggs, creamy avocado, and warm tortillas. Perfect for a healthy breakfast or brunch, these tacos are flavorful, filling, and ready in minutes.

Ingredients

Tortillas

  • 8 small flour or corn tortillas

Salmon and Eggs

  • 8 oz salmon fillet (fresh or leftover), cooked and flaked
  • 4 large eggs
  • 2 tbsp milk
  • Salt and black pepper, to taste
  • 1 tbsp olive oil or butter

Toppings

  • 1 ripe avocado, sliced or diced
  • ½ cup shredded Monterey Jack or cheddar cheese
  • Fresh cilantro, chopped (optional)
  • Lime wedges (optional)
  • Hot sauce or salsa (optional)

Instructions

  1. Warm Tortillas: Warm tortillas in a skillet or microwave; keep covered to stay soft and pliable.
  2. Prepare Salmon: Season salmon lightly with salt and pepper. Flake into bite-sized pieces using a fork or your fingers.
  3. Whisk Eggs: In a bowl, whisk eggs with milk, salt, and pepper until combined and slightly frothy.
  4. Cook Eggs: Heat olive oil or butter in a skillet over medium heat. Add eggs and cook gently, stirring continuously until softly scrambled but not overcooked.
  5. Warm Salmon: Briefly warm the flaked salmon in the skillet if it is cold, just to bring it to serving temperature.
  6. Assemble Tacos: Place scrambled eggs on each tortilla, top with flaked salmon, avocado slices, and shredded cheese.
  7. Garnish and Serve: Garnish with fresh cilantro, a squeeze of lime juice, and hot sauce or salsa if desired. Serve immediately for best taste.

Notes

  • Smoked salmon works great for extra flavor.
  • Add sautéed onions or spinach if desired for extra veggies.
  • Use corn tortillas for a gluten-free option.
  • Best served fresh to enjoy the creamy and warm textures.
