Description

This Ritz Cracker Meatloaf is moist, tender, and packed with flavor. Crushed buttery Ritz crackers replace traditional breadcrumbs, creating an extra-soft texture that makes this classic American comfort food a family favorite.

Ingredients

Main Ingredients

  • 1½ lbs ground beef
  • 1 sleeve Ritz crackers, crushed (about 1½ cups)
  • 2 large eggs
  • ½ cup milk
  • ½ cup onion, finely diced
  • 2 tbsp ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper

Topping

  • ⅓ cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to warm up while you prepare the meatloaf mixture.
  2. Combine ingredients: In a large bowl, gently combine ground beef, crushed Ritz crackers, eggs, milk, finely diced onion, ketchup, Worcestershire sauce, garlic powder, salt, and black pepper until just mixed to keep the meatloaf tender.
  3. Shape the loaf: Form the mixture into a loaf shape and place it in a greased loaf pan or on a baking sheet for even cooking.
  4. Prepare the topping: Mix together ketchup, brown sugar, and mustard. Spread this evenly over the top of the meatloaf to create a flavorful glaze.
  5. Bake the meatloaf: Place in the oven and bake for 55 to 65 minutes, or until the internal temperature reaches 160°F (71°C), ensuring it’s fully cooked and juicy.
  6. Rest before serving: Remove from the oven and let the meatloaf rest for 10 minutes to allow juices to redistribute before slicing and serving.

Notes

  • Do not overmix the meat mixture to maintain a tender texture.
  • For extra richness, add shredded cheese into the meat mixture before baking.
  • Leftover meatloaf slices make excellent sandwiches for next-day meals.
