Description

Ratatouille Casserole is a vibrant and wholesome baked vegetable dish featuring layers of zucchini, yellow squash, eggplant, tomatoes, bell peppers, and onions seasoned with garlic, herbs, and spices. This comforting casserole is a delicious way to highlight fresh summer vegetables and can be enjoyed as a main course or side dish.

Ingredients

Vegetables

  • 1 medium zucchini, thinly sliced
  • 1 medium yellow squash, thinly sliced
  • 1 small eggplant, thinly sliced
  • 3 large tomatoes, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 small onion, thinly sliced

Seasonings & Sauce

  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup tomato sauce
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole evenly.
  2. Prepare baking dish: Spread the tomato sauce evenly over the bottom of a suitable baking dish to create a flavorful base for the vegetables.
  3. Arrange vegetables: Alternate and layer the thinly sliced zucchini, yellow squash, eggplant, tomatoes, bell pepper, and onion in the baking dish in rows or overlapping slices for an attractive presentation and even cooking.
  4. Add seasonings: Sprinkle minced garlic, dried thyme, dried oregano, paprika, salt, and black pepper over the arranged vegetables to infuse the dish with aromatic flavors.
  5. Drizzle olive oil: Evenly drizzle the olive oil on top to help with roasting and to enhance the richness of the casserole.
  6. Cover and bake: Cover the baking dish with foil and bake in the preheated oven for 35 minutes to allow the vegetables to soften and flavors to meld.
  7. Bake uncovered: Remove the foil and bake for an additional 15–20 minutes until the vegetables are tender and lightly browned on top, indicating caramelization and depth of flavor.
  8. Garnish and serve: Remove from oven, sprinkle with fresh chopped basil for a burst of color and freshness, and serve the casserole warm as a hearty side or main dish.

Notes

  • Slice the vegetables evenly so they cook at the same rate and have a consistent texture.
  • For a cheesy variation, add grated Parmesan or mozzarella cheese before baking or during the last 10 minutes of cooking.
  • This casserole makes an excellent side dish or can be served over grains like rice, couscous, or pasta for a complete meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat before serving.
