Ingredients
Crust
- 1 1/2 cups all-purpose flour

Coconut Topping
- 1 1/2 cups shredded sweetened coconut

Instructions
- Preheat oven and prepare pan: Preheat the oven to 175°C (350°F) and line a 20 cm (8-inch) square baking pan with parchment paper to prevent sticking.
- Make the crust: In a mixing bowl, combine the all-purpose flour, melted unsalted butter, granulated sugar, vanilla extract, and salt. Stir until a soft dough forms that holds together.
- Press and bake crust: Evenly press the dough into the bottom of the prepared baking pan, creating a compact base. Bake in the preheated oven for 12 to 15 minutes until the crust is set and lightly golden.
- Add raspberry layer: Remove the crust from the oven and while still warm, spread the raspberry jam evenly over the surface to form a fruity layer.
- Prepare coconut topping: In a bowl, whisk together the eggs, granulated sugar, and vanilla extract until well combined. Gently fold in the shredded sweetened coconut to create the topping mixture.
- Assemble and bake bars: Spread the coconut topping evenly over the raspberry jam layer. Return the pan to the oven and bake for an additional 20 to 25 minutes until the coconut topping turns golden and set.
- Cool and serve: Allow the bars to cool completely in the pan to firm up. Once cooled, lift out using parchment paper and cut into 16 square bars for serving.
