Description
Rainbow Fruit Popsicles are naturally sweet frozen treats made with colorful layers of fresh fruit for a refreshing and healthy dessert that is perfect for summer. These vibrant popsicles combine the natural flavors of strawberries, mango, kiwi, blueberries, and grapes, blended with coconut water or fruit juice, to create a visually stunning and nutritious snack suitable for all ages.
Ingredients
Fruit Layers
- 1 cup strawberries
- 1 cup mango chunks
- 1 cup kiwi, peeled and sliced
- 1 cup blueberries
- 1 cup grapes
Additional Ingredients
- 1 cup coconut water or fruit juice
- 1 tablespoon honey (optional)
Instructions
- Blend Each Fruit Layer: Blend each type of fruit separately with a small amount of coconut water or fruit juice until smooth. Optionally, add honey to sweeten each fruit puree according to taste.
- Layer First Fruit: Pour the first fruit puree into popsicle molds, filling about one layer. Freeze this layer for 20 to 30 minutes until it is partially set.
- Add Subsequent Layers: Repeat the blending and freezing process with the remaining pureed fruits, pouring each new layer over the previous one once it is partially frozen. Freeze each layer briefly to maintain distinct color separation.
- Insert Sticks: After pouring the second fruit layer, insert popsicle sticks into the molds so they stay centered as the popsicles freeze completely.
- Final Freeze: Freeze the combined popsicles for at least 6 hours or preferably overnight until fully solid.
- Unmold Popsicles: To remove the popsicles from the molds, run the molds under warm water for a few seconds to loosen them, then gently pull the popsicles out for serving.
Notes
- Freeze each fruit layer partially before adding the next to ensure clear, distinct layers and vibrant colors.
- Both fresh and frozen fruits can be used depending on availability and preference.
- Honey is optional and can be omitted for a completely natural and vegan-friendly treat.
- Using coconut water adds a subtle tropical flavor and enhances hydration.
