Description
Soft and fluffy pumpkin pancakes infused with warm fall spices, perfect for a cozy breakfast.
Ingredients
Dry Ingredients
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon pumpkin pie spice
- 1 tablespoon sugar
Wet Ingredients
- 1 cup milk
- 1/2 cup pumpkin puree
- 1 egg
- 2 tablespoons melted butter
Instructions
- Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, pumpkin pie spice, and sugar until well combined.
- Combine wet ingredients: In a separate bowl, whisk the milk, pumpkin puree, egg, and melted butter until fully blended.
- Mix wet and dry: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix to keep the pancakes light and fluffy.
- Cook pancakes: Heat a greased griddle or nonstick skillet over medium heat. Pour the batter onto the griddle to form pancakes of your desired size. Cook until bubbles begin to form on the surface and the edges look set, about 2-3 minutes. Flip and cook the other side until golden brown, about 1-2 minutes more.
- Serve warm: Serve the pumpkin pancakes hot with your favorite toppings such as maple syrup, butter, or fresh fruit.
Notes
- Do not overmix the batter to ensure pancakes remain fluffy.
- Use fresh pumpkin puree for best flavor, or canned pure pumpkin without added spices.
- Adjust the pumpkin pie spice amount to your preference for spice intensity.
- Keep pancakes warm in a low oven if making multiple batches.
