Description

Pesto Grilled Chicken is a vibrant and mouthwatering dinner option where tender chicken breasts are coated with a flavorful blend of basil pesto, lemon juice, garlic, and Parmesan cheese. Grilling imparts smoky charred edges while maintaining juicy, succulent meat inside, making it perfect for a quick and delicious meal.

Ingredients

Chicken and Marinade

  • 4 boneless, skinless chicken breasts
  • ½ cup basil pesto
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • ¼ tsp black pepper

Toppings and Garnishes

  • ¼ cup grated Parmesan cheese
  • Fresh basil, for garnish
  • Lemon wedges, for serving

Instructions

  1. Prepare Chicken: Place the chicken breasts between two pieces of plastic wrap and gently pound them to an even thickness to ensure uniform cooking.
  2. Make Marinade: In a bowl, combine basil pesto, olive oil, fresh lemon juice, minced garlic, and black pepper to create a flavorful marinade.
  3. Marinate Chicken: Add the chicken breasts to the marinade and coat them thoroughly. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to penetrate.
  4. Preheat Grill: Heat the grill to medium-high heat, around 400°F (200°C), preparing it for cooking the chicken.
  5. Grill Chicken: Remove chicken from the marinade and place on the hot grill. Cook for 5–7 minutes on each side, depending on thickness, until the internal temperature reaches 165°F (74°C).
  6. Add Cheese: Sprinkle grated Parmesan cheese over the chicken during the last minute of grilling to allow it to melt slightly.
  7. Rest Chicken: Remove the chicken from the grill and let it rest for 5 minutes to retain juices and finish cooking evenly.
  8. Serve: Garnish with fresh basil leaves and serve with lemon wedges for a bright, fresh finish.

Notes

  • You can use either homemade or good-quality store-bought basil pesto depending on your preference and convenience.
  • Chicken thighs can be used instead of breasts; just increase the grilling time to ensure thorough cooking.
  • Be careful not to overcook the chicken to keep it juicy and tender.
  • This dish pairs wonderfully with grilled vegetables, pasta, rice, or a light salad for a complete meal.
