Instructions

  1. Prepare Peaches: Combine the peeled and chopped peaches with 1/4 cup of granulated sugar and the fresh lemon juice in a bowl. Let this sit for 20–30 minutes to allow the peaches to release their natural juices.
  2. Mash Peaches: Mash or puree the peach mixture, leaving some small chunks for texture if desired.
  3. Mix Ice Cream Base: In a separate bowl, whisk together the heavy cream, whole milk, the remaining 3/4 cup sugar, vanilla extract, and a pinch of salt until the sugar is dissolved and mixture is smooth.
  4. Combine Mixtures: Stir the mashed peach mixture into the cream base until fully incorporated.
  5. Chill Mixture: Refrigerate the combined mixture for at least 2 hours to make sure it is thoroughly chilled before churning.
