Description
Peach Balsamic Grilled Chicken is a delightful summer dish featuring juicy grilled chicken breasts paired with sweet, charred peaches and a tangy balsamic glaze. Enhanced with fresh herbs, garlic, and a touch of honey, this recipe offers a perfect balance of sweet and savory flavors, making it an ideal main course for warm-weather meals or backyard barbecues.
Ingredients
Chicken and Marinade
- 4 boneless, skinless chicken breasts
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 garlic cloves, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Peaches and Garnish
- 2 ripe peaches, sliced
- 2 tablespoons fresh basil, chopped
- 2 tablespoons crumbled feta cheese (optional)
Instructions
- Prepare the Marinade: In a small bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, Dijon mustard, dried thyme, salt, and black pepper until fully combined and smooth.
- Marinate the Chicken: Place the chicken breasts in a shallow dish and pour half of the prepared marinade over them. Cover the dish and refrigerate for at least 30 minutes to allow the flavors to infuse into the chicken.
- Preheat the Grill: Set your grill to medium-high heat to prepare for cooking the chicken and peaches.
- Grill the Chicken: Grill the marinated chicken breasts for about 5 to 7 minutes per side, brushing occasionally with the reserved marinade to keep the meat moist and flavorful. Cook until the chicken reaches an internal temperature of 165°F (74°C) and is no longer pink in the center.
- Grill the Peaches: During the last few minutes of cooking the chicken, place the peach slices on the grill. Grill peaches for 2 to 3 minutes per side, until lightly charred and softened but still holding their shape.
- Rest the Chicken: Remove the chicken breasts and peach slices from the grill. Let the chicken rest for about 5 minutes to retain its juices and finish cooking through.
- Assemble and Serve: Arrange the grilled peaches over the rested chicken breasts. Garnish with freshly chopped basil and, if using, sprinkle crumbled feta cheese on top. Serve warm for a fresh, flavorful meal.
Notes
- Use ripe but firm peaches so they hold their shape on the grill without becoming mushy.
- Chicken thighs can be used as an alternative to chicken breasts and will provide a juicier, more flavorful texture.
- Add a bed of arugula or mixed greens to the plate to turn the dish into a refreshing salad.
- For an extra boost of balsamic flavor, drizzle with a balsamic glaze just before serving.
