Description

A fun and family-friendly breakfast casserole combining fluffy pancakes, maple flavor, and a baked custard for an easy make-ahead meal.

Ingredients

Main Ingredients

  • 8 prepared pancakes, cut into bite-sized pieces
  • 6 large eggs
  • 1 cup milk
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ cup blueberries or chocolate chips (optional)

For Serving

  • Powdered sugar, for serving

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Prepare baking dish: Grease a 9×13-inch baking dish evenly to prevent sticking.
  3. Arrange pancakes: Cut the prepared pancakes into bite-sized pieces and distribute them evenly in the greased baking dish.
  4. Mix custard: In a bowl, whisk together the eggs, milk, maple syrup, vanilla extract, and cinnamon until fully combined.
  5. Pour custard: Pour the egg mixture evenly over the pancakes in the baking dish.
  6. Add toppings: Sprinkle blueberries or chocolate chips on top if desired to add extra flavor and texture.
  7. Let stand: Allow the casserole to sit for 10 minutes so the pancakes can absorb the custard mixture, enhancing texture and flavor.
  8. Bake: Place the baking dish in the preheated oven and bake for 30–35 minutes until the casserole is set and the top is lightly golden brown.
  9. Cool and serve: Remove from oven, let it cool slightly, dust with powdered sugar, and serve warm. Optionally, serve with additional maple syrup and fresh fruit for extra sweetness.
