Description
A lighter, low-carb twist on the viral baked feta pasta featuring tender Palmini noodles baked with creamy feta cheese, roasted cherry tomatoes, garlic, and fresh basil for a flavorful Mediterranean-inspired main course.
Ingredients
Palmini Noodles
- 1 can Palmini noodles (drained and rinsed)
Cheese and Vegetables
- 1 block (8 oz) feta cheese
- 2 cups cherry tomatoes
- 2 cloves garlic, minced
Seasonings and Garnish
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the feta and tomatoes.
- Prepare Tomatoes and Garlic: In a baking dish, add the cherry tomatoes and minced garlic. Drizzle with olive oil evenly over the top to enhance roasting flavor.
- Bake Feta and Tomatoes: Place the entire block of feta cheese in the center of the dish amidst the tomatoes. Bake in preheated oven for about 25 minutes or until the feta is softened and the tomatoes are bursting and slightly caramelized.
- Mix in Palmini Noodles: Remove the dish from the oven. Add the drained and rinsed Palmini noodles to the hot baked feta and tomatoes. Stir thoroughly to combine and create a creamy sauce coating the noodles.
- Season and Garnish: Season the pasta with salt and pepper to taste. Finally, top with fresh basil leaves for a fragrant and fresh finish before serving.
Notes
- For added nutrition and flavor, mix in fresh spinach or sprinkle chili flakes before baking.
- Use vegan feta cheese as a dairy-free alternative to make this dish suitable for vegan diets.
