Description

A classic comfort dish featuring juicy, tender chicken roasted alongside crispy, golden potatoes. Simple, flavorful, and perfect for family meals.

Ingredients

Chicken and Potatoes

  • 4 chicken thighs or drumsticks
  • 4 medium potatoes, cut into chunks

Seasoning

  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon juice (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (392°F) to ensure it’s hot enough for roasting the chicken and potatoes evenly.
  2. Prepare Ingredients: Place the chicken pieces and potato chunks into a large baking dish, ensuring they are spread out for even cooking.
  3. Add Seasonings: Drizzle the olive oil over the chicken and potatoes, then add minced garlic, paprika, dried thyme or rosemary, salt, and black pepper.
  4. Toss to Coat: Mix and toss the chicken and potatoes thoroughly in the baking dish so that all pieces are evenly coated with the oil and spices.
  5. Arrange Chicken: Arrange the coated chicken pieces on top of the potatoes to allow the juices from the chicken to flavor the potatoes during roasting.
  6. Roast: Place the baking dish in the preheated oven and roast for 40 to 50 minutes, until the chicken is cooked through (internal temperature should reach 75°C / 165°F) and the potatoes are golden and crispy.
  7. Optional Flavor Boost: Once out of the oven, drizzle the chicken and potatoes with fresh lemon juice for a bright, tangy finish before serving.

Notes

  • Flip the potatoes halfway through cooking to enhance crispiness on all sides.
  • Add carrots or onions in the baking dish for more flavor and variety.
  • You can substitute chicken thighs with breasts but adjust the cooking time accordingly as breasts cook faster and may dry out if overcooked.
