Ingredients
Chicken and Seasoning
- 2 chicken breasts, diced
- 1 tsp smoked paprika
- Salt & pepper to taste
Rice and Sauce
- 1 tbsp olive oil
- 1 cup uncooked rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- 2 tbsp honey
Garnish
- Green onions for garnish
Instructions
- Cook the chicken: Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the diced chicken breasts and season them with smoked paprika, salt, and pepper. Cook the chicken pieces until they are browned on all sides, stirring occasionally to ensure even cooking.
- Add rice and liquids: Stir in 1 cup of uncooked rice followed by 2 cups of chicken broth, ½ cup BBQ sauce, and 2 tablespoons of honey. Mix everything well to combine the flavors and make sure the rice is evenly distributed in the pan.
- Simmer the mixture: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the pan with a tight-fitting lid. Let it simmer gently for 18 to 20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff and garnish: Remove the pan from heat and let it sit covered for a few minutes. Then, use a fork to fluff the rice and mix it with the chicken and sauce. Garnish with chopped green onions before serving hot.
Notes
- Add corn or diced bell peppers along with the chicken for extra flavor and nutrients.
- Using brown rice is a healthy alternative, but increase cooking time by about 10 minutes and add more chicken broth as needed.
- Adjust honey and BBQ sauce quantities to your desired sweetness and smokiness levels.
