Ingredients

Chicken and Marinade

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

Vegetables

  • 2 cups broccoli florets
  • 1 cup cherry tomatoes
  • 1 zucchini, sliced
  • ½ red onion, sliced

Garnish

  • Fresh basil, for garnish


Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for baking the chicken and vegetables.
  2. Make the balsamic glaze: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, Italian seasoning, salt, and black pepper until well combined.
  3. Arrange chicken and vegetables: On a large sheet pan, spread out the chicken breasts evenly, then scatter the broccoli florets, cherry tomatoes, sliced zucchini, and red onion around them.
  4. Coat with glaze: Pour the balsamic mixture evenly over the chicken and vegetables. Toss the vegetables gently on the pan to coat them well without displacing the chicken.
  5. Bake the dish: Place the sheet pan in the preheated oven and bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are cooked through and tender.
  6. Garnish and serve: Remove from the oven and sprinkle fresh basil leaves over the chicken and vegetables before serving to add a bright, fresh flavor.
