Instructions
- Prepare the mixture: In a large bowl, combine the drained, flaked salmon, breadcrumbs, and finely chopped onion. Mix these dry ingredients well to ensure even distribution.
- Add binding and flavor: Add the egg, mayonnaise, mustard, and lemon juice to the salmon mixture. Stir until everything is well combined, helping the mixture bind together for patties.
- Season the mix: Season the mixture with salt, black pepper, and add chopped fresh parsley if desired. Mix gently but thoroughly to incorporate the seasoning evenly.
- Form patties: Take portions of the mixture and shape them into small, evenly sized patties to ensure uniform cooking.
- Heat oil: Heat 2 to 3 tablespoons of oil in a skillet over medium heat until hot but not smoking, preparing for pan-frying.
- Fry patties: Place patties in the hot skillet and fry them for 3 to 4 minutes on each side, or until they turn golden brown and crispy on the outside.
- Drain and serve: Remove the cooked patties from the skillet and place them on paper towels to drain excess oil. Serve warm with your choice of accompaniments such as tartar sauce or a squeeze of fresh lemon juice.
