Ingredients

Meat

  • 4 pork sausages, casings removed

Vegetables

  • 250 g mushrooms, sliced
  • 1 fennel bulb, finely sliced
  • 1 onion, finely chopped

Grains & Dairy

  • 1 1/2 cups arborio rice
  • 1/2 cup grated parmesan cheese

Liquids & Seasoning

  • 4 cups chicken stock
  • Salt and black pepper, to taste


Instructions

  1. Brown the sausage: In a large pan over medium heat, brown the sausage meat, breaking it up with a spoon as it cooks. Cook thoroughly until browned and cooked through, then remove the sausage from the pan and set it aside.
  2. Sauté onion and fennel: Add the finely chopped onion and sliced fennel bulb to the same pan. Cook them over medium heat until they are softened and translucent, releasing their aromatic flavors.
  3. Cook mushrooms and rice: Stir in the sliced mushrooms and arborio rice with the softened vegetables. Cook for about 1 minute to toast the rice lightly and blend the flavors.
  4. Add stock gradually: Gradually pour in the warm chicken stock in increments, stirring regularly and allowing the rice to absorb the liquid between additions. Continue this process until the rice is tender and creamy, which should take about 20-25 minutes.
  5. Combine sausage and cheese: Stir the cooked sausage back into the risotto, then add the grated parmesan cheese. Mix well to incorporate all flavors, and season with salt and black pepper to taste.
  6. Serve: Once creamy and well combined, serve the risotto hot, optionally garnishing with extra parmesan or fresh herbs if desired.
