Description

These Mini Frittatas with Veggies are perfect bite-sized baked egg muffins loaded with colorful vegetables and cheese, making a nutritious and delicious breakfast or snack option. Quick to prepare and bake, they are ideal for meal prepping or serving at brunch gatherings.

Ingredients

Egg Mixture

  • 8 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Vegetables

  • 1/2 cup diced bell peppers (red, yellow, green)
  • 1/2 cup chopped fresh spinach
  • 1/4 cup diced onion
  • 1/4 cup diced tomatoes (optional, seeds removed)

Cheese

  • 1/2 cup shredded cheddar cheese (or your choice of cheese)

Optional Garnish

  • Fresh chopped parsley or chives for topping

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a mini muffin tin with cooking spray or oil to prevent sticking.
  2. Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, and black pepper until fully combined and slightly frothy for a fluffy texture.
  3. Add Vegetables and Cheese: Stir the diced bell peppers, chopped spinach, diced onion, and tomatoes into the egg mixture. Then fold in the shredded cheese evenly throughout.
  4. Fill the Muffin Tin: Pour the egg and vegetable mixture evenly into the prepared mini muffin tin cups, filling each about 3/4 full to allow room for puffing up while baking.
  5. Bake: Place the muffin tin on the middle rack of the oven and bake for 15-18 minutes, or until the frittatas are set and lightly golden on top. A toothpick inserted should come out clean.
  6. Cool and Serve: Let the mini frittatas cool in the tin for a few minutes before removing. Garnish with fresh parsley or chives if desired and serve warm or at room temperature.

Notes

  • You can customize the vegetables based on your preference or seasonal availability.
  • Adding a pinch of your favorite herbs or spices enhances flavor.
  • Make sure not to overfill the muffin cups to prevent overflow during baking.
  • These mini frittatas can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to a month.
