Description

Mediterranean Stuffed Salmon is a delightful and healthy main course featuring tender salmon fillets filled with a flavorful mixture of spinach, feta cheese, sun-dried tomatoes, garlic, and herbs. This elegant yet simple dish bursts with Mediterranean flavors and is perfect for an easy weeknight dinner or special occasion.

Ingredients

Salmon

  • 4 salmon fillets

Stuffing

  • 1 cup baby spinach, chopped
  • ½ cup crumbled feta cheese
  • ¼ cup chopped sun-dried tomatoes
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

To Serve

  • Lemon wedges

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the ideal baking temperature before cooking the salmon.
  2. Prepare Salmon Fillets: Using a sharp knife, carefully cut a pocket into each salmon fillet, being mindful not to cut all the way through to create a cavity for the stuffing.
  3. Make the Filling: In a medium bowl, combine chopped baby spinach, crumbled feta cheese, chopped sun-dried tomatoes, minced garlic, dried oregano, olive oil, salt, and pepper. Mix well to incorporate all the Mediterranean flavors evenly.
  4. Stuff the Salmon: Gently spoon the prepared spinach and feta mixture into the pocket of each salmon fillet, ensuring an even distribution of filling in each piece. If needed, secure the opening with toothpicks to prevent the stuffing from spilling out during cooking.
  5. Arrange and Bake: Place the stuffed salmon fillets on a lined baking tray. Bake in the preheated oven for 15–18 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Serve: Remove the salmon from the oven and serve immediately with fresh lemon wedges to add a bright, zesty finish to the dish.

Notes

  • Use toothpicks to secure the salmon pockets if the filling tends to fall out while baking.
  • For a complete meal, serve with roasted vegetables, steamed rice, or a light side salad.
  • Fresh baby spinach is recommended for the best texture and flavor in the stuffing.
  • Be careful not to overcook the salmon to maintain its moist and tender texture.
